Banana Choc & Nut Cake



What do I like most about banana?
I can turn them into delicious cakes!!!!!
So I’m going to talk about banana … (in pyjamas??? Not!!!!)
I usually have constant supply of banana at home .. and when the supply exceeds demand… hehehhe… the banana turns into this….


Banana-Choc –N-Nut Cake
1 1/2 cups self raising flour - sifted
3-4 medium sized bananas - mashed
3/4 cup sugar
1 egg (large)
1/3 cup butter - melted
1/3 cup brown sugar
1-2 tbsp cocoa powder – sifted (+ 1 tbsp milk)
½ cup chopped walnuts (or any nuts that u like. I like to use pecans…. A match made in heaven!)

Method:
In a large bowl, beat together bananas, sugar, egg and melted butter till well blended. Add in flour to the banana mixture and mix evenly.
Divide mixture into halves. Add cocoa powder and milk to one portion and stir thoroughly.
Line your baking pan with baking paper. Spoon the cocoa batter first before you top with the white banana batter. Sprinkle nuts on the top layer. .
Bake in preheated oven for 40 to 60 minutes, until a toothpick inserted into center of the cake comes out clean.


Voilaaa……. Enjoy! You can also turn this into muffins. Spoon into muffin cups (alternate with cocoa and banana batter, topped with nuts). Bake for 20 mins or so….

I am busy, I'm confused!

I have been very quiet this week.. no updates, no hopping around leaving any trail of my existence, probably due to the following reasons: 1. Yes, I’ve been blessed with a lot of wonderful people around me….. yes friends, you! Read on…. Yesterday, around 6.15pm, I was in the middle of reviewing something when I was called for a meeting with one of big bosses here…. And I was thinking in anger, ‘Great! It was Nik's Birthday

It was my husband’s birthday yesterday and we took the day off to ‘merewang’ while feeling young, kononnya. The theme of the celebration? Reminiscing the days when we were courting back in 1993 minus the snow.... ancient sungguh rasanya! We had our breakfast at O’Brien’s early in the morning and took a slow stroll along the shops in OU and enjoyed every minute of it (at 10am in the morning, mind you, and the shops were barely opened). Later we watched ‘Lake House’ and we were charged RM12 only for 2 tickets (the early bird tickets were so damn cheap, I almost fainted!). There were only a few couples inside and we took the opportunity to sit right at the middle (ikut suka hati), since the theater was quite empty. How was the movie? Hmm… ok la, I would say it was the right movie for the occasion… hehe. A bit slow though, biasa la, romantic piece.
