Banana Choc & Nut Cake

What do I like most about banana?
I can turn them into delicious cakes!!!!!
So I’m going to talk about banana … (in pyjamas??? Not!!!!)
I usually have constant supply of banana at home .. and when the supply exceeds demand… hehehhe… the banana turns into this….

Banana-Choc –N-Nut Cake
1 1/2 cups self raising flour - sifted
3-4 medium sized bananas - mashed
3/4 cup sugar
1 egg (large)
1/3 cup butter - melted
1/3 cup brown sugar
1-2 tbsp cocoa powder – sifted (+ 1 tbsp milk)
½ cup chopped walnuts (or any nuts that u like. I like to use pecans…. A match made in heaven!)

Method:
In a large bowl, beat together bananas, sugar, egg and melted butter till well blended. Add in flour to the banana mixture and mix evenly.
Divide mixture into halves. Add cocoa powder and milk to one portion and stir thoroughly.
Line your baking pan with baking paper. Spoon the cocoa batter first before you top with the white banana batter. Sprinkle nuts on the top layer. .
Bake in preheated oven for 40 to 60 minutes, until a toothpick inserted into center of the cake comes out clean.

Voilaaa……. Enjoy! You can also turn this into muffins. Spoon into muffin cups (alternate with cocoa and banana batter, topped with nuts). Bake for 20 mins or so….

I am busy, I'm confused!

I have been very quiet this week.. no updates, no hopping around leaving any trail of my existence, probably due to the following reasons: 1. Nasreen will be having her exam next week, so I’m busy reviewing her syllabus (and also nagging to make sure she prepares herself). Yes, instead of her reviewing her books, the responsibility – by default – is shifted to me…. Hmm, mothers nowadays. We feel the pressure more than our kids (and we panic even more while waiting for the results to come out). Hehehe. I can’t remember my mother even touched my textbooks when I was in Primary 3. No wonder we grow old faster these days…. 2. I’m having mood swings this week. One day, I feel elated, then mellow on the next day, moody on the following day. Work is adding on my desk, scope is being expanded, news is floating around and remarks are beings smacked everywhere (manage to steer clear of some and the rest sometimes just landed right on my very lap). A Walk to Remember!?

Finally, I’m writing…. The trip to Singapore was fun…. And also, full of crazy moments.. heheh… Clockwise : The Q @ immigration, street performers @ Orchard, moi infront of Far East Plaza, Nik chilling out @ Starbucks Suntec CT & my precious new sandal... I like!! We left KL after Subuh & managed to reach Johor around 10am. The trip was a short one so we decided to leave the kids behind. It was a smooth ride on a cool & very breezy morning with just enough sun all the way (yes, made me sleepy also!). I took some cool pictures along the way and later discovered that I accidently deleted all of the scenery pics from my camera.... *sigh* Sometimes I can be more than the word 'clumsy' could describe... Angels - Mission Possible...!?

Last week was a week full of excitement for me. One, because I was busy with my work, so the week went by faster than usual…. (meaning: less time spent on ‘termenung’ & missing my husband); Two, my hubby dearest was scheduled to arrive on Friday night (3rd March 2006), the more reason for me be thrilled and eager counting the days; Three, me and the rest of March Angels ( Leilanie & T. Ina ) planned to meet up on Friday (3rd March 2006, also) to celebrate our birthdays and Leilanie had this fantastic idea of challenging ourselves to find gifts for the birthday mommies (and the gifts must cost less than 10 bucks each!) – and Leilanie, I must tell you that this challenge really made me sweat all afternoon on Thursday….. hehehe …and Four, me & my husband (and also the children) planned for a weekend getaway to Cyberview Lodge Resort & Spa on 4th & 5th March 2006. There I said it…..nothing much to say about point One & Two…. but point Three and Four…..definitely!!!...
