My mom's roti jala is the best... but it's quite hard to learn from her because when she cooks, she doesn't follow any specific measurements. All will be based on her so-called 'instinct'. Thanks to Google, I tracked this recipe down and tried it for sooo many times, and it's error free....so far. LOL! Thanks to myResipi...
So let's check it out peeps...
Preparation for about 6-8 pax.
450gm flour, sifted + a pinch of salt
450 ml fresh milk (I used Dutch Lady Full Cream)
450 ml water
2-3 tbsp butter, melted over low heat + extra butter or vege oil (for cooking)
3 eggs, lightly beaten
Mix together the wet ingredients (i.e milk, half of water, eggs and butter). Add flour to the mixture and mix thoroughly. Continue to whisk while you add on water (slowly) to the mixture ... continue adding until texture of the mixture is just right (flows smoothly down the roti jala mold). Add light yellow coloring, if required.
** note - tapis the mixture if required - kalau ada bits of tepung in the mixture... Let the mixture stand for 30-45mins.
Jala the mixture on a flat pan on medium heat (for abt 2-3 mins) before you remove it from the pan. Serve while hot with chicken curry. Nice....
