Lemony Bundt Cake

While Nik was making his routine run, I had a short ride with Mr Max last Saturday. I think I only made about 7km.. and believe me, it made my butt numb!!! Btw, I am still short of riding gear.... I need my bicycle helmet, the riding shirt and also my riding pants ... but I shudder at the thought of wearing that padded, tight cycling pants!..... don't really fancy the padding, let's just say I have enough of that on my own... LOL!


What I'm doing now... it's almost midnite and I'm 'lepaking' in my room with my 2 loyal lappies (don't ask me why I need 2!) and thinking about what to write..... it was a veryyy hectic day for me at the office today. I need to relax... and relaxing, I am.

Oh well... maybe I'll post that recipe I was talking about yesterday. This may not be the best cake ever, but if you enjoy eating and baking, may be you'll like this.

And this may not be the best recipe for bundt cake, but i like the tangy taste it has because of the citrus zest in it.

Please note that I got this from one of the food blogs (so it's not something that I invented out of my limited creativity), and because of so many food blogs that I diligently hop on a daily basis - without fail, I seriously cannot remember which blog I took this from ... plus, I've already made some adjustments to the original recipe.... so here goes...

Lemony Bundt Cake

1 bar butter, softened (I used salted butter)
170 gm cream cheese, softened
300 gm self raising flour
1 3/4 cups castor sugar
5 eggs
2 tsp of lemon zest, finely grated

For glazing:
130 gm icing sugar, sifted
2 tbsp fresh lemon juice

Method:
Beat butter and cream cheese together until smooth and fluffy. Add in sugar to the mixture and continue to beat on medium speed. Add eggs one at a time until mixture is well blended. Add in the flour (in 2 batches) and mix well. Finally add in the lemon zest and beat on medium speed for another 5 mins.

Pour mixture into a baking pan (butter and flour the pan for easy release). Bake for 1 hr (approx)... you can use bundt pan, or if you don't have one, a normal baking pan will do.


I sprinkled chocolate rice and orange peel on top before baking


I so need a new grater.. this one constantly grates my fingers and not the lemon!!

Glaze (this is optional - I skipped):
Whisk icing sugar and lemon juice together until smooth. Pour over the cooled cake and let the glaze set before serving.

You can serve with the glaze or just eat it without the glaze.... marvelous!


Version I - I added pecan in this version.

The Day I Decided To Write Again

A Walk to Remember!?

Finally, I’m writing…. The trip to Singapore was fun…. And also, full of crazy moments.. heheh… Clockwise : The Q @ immigration, street performers @ Orchard, moi infront of Far East Plaza, Nik chilling out @ Starbucks Suntec CT & my precious new sandal... I like!! We left KL after Subuh & managed to reach Johor around 10am. The trip was a short one so we decided to leave the kids behind. It was a smooth ride on a cool & very breezy morning with just enough sun all the way (yes, made me sleepy also!). I took some cool pictures along the way and later discovered that I accidently deleted all of the scenery pics from my camera.... *sigh* Sometimes I can be more than the word 'clumsy' could describe... Anyway, we wanted to enter Singapore via TUAS, then I remembered that we didn’t even have a single cent of S$, so we drove down to JB town and looked for money changer. Then I thought…. no harm of taking the Causeway since it was a Sunday and I was so damn sure that traf...
