Cheese Bread Pudding

This is one of my fav.... you can just dump in anything that fancy, fruits, nuts, chocolates, oats... ANYTHING!  And the best part is... it'll take less than half an hour to prep, about an hour to soak and bake it for 45-60mins.  Voila... they're ready for you to dig in.

If you are expecting some guests and you don't have enough time to prepare anything to serve them... think of this bread pudding.  You can have it chilled before serving or you can serve it warm - it all depends on what you like.  Alternatively, you can call this WHAT-I-LIKE Bread Pudding.  It is best served with vanilla sauce... but having it without the sauce is just as good.

So, are you ready?  Here goes...

Spray your baking pan (I used a square 8"x 8" pan) with non-stick baking spray.

Cut your preferred bread in cubes and arrange them in the baking pan - arrange or just throw them in.  Style and creativity is not required in this recipe :).  You can use any kind of bread, white or wholemeal sandwich bread, french loaf, croissants, dinner rolls - or whatever bread that you have in your pantry.  Just use any kind and make sure you cut them in small pieces before throwing them all in your baking pan - maybe approximately 2" x 2" size, don't worry so much about the measurement.  I cut them because it's easier for them to soak in the liquid, therefore, less waiting time.  I don't have specific measurement on how many slices of bread that you will require... just load them in the pan and make sure they cover every single inch of the pan, but don't overflow.  

Then, you can go ahead and prepare the liquid mixture.

250 gm cream cheese
1/4 - 1/2 cup sugar or brown sugar - i used brown sugar
3-4 eggs, depending on the amount of bread that you use
1-2 cups of fresh milk - use enough milk to soak all of the bread that you put in
2 tsp vanilla extract 

Optional:
Blueberries
Rasberries
Almond flakes
Orange peel
Walnuts

Beat the cream cheese, sugar and egg until combine.  Add in vanilla extract and milk.  
Continue to beat - it's ok if the mixture is a bit lumpy.  As I said, no creativity is needed here, so don't mind the look of the mixture.  Pour the mixture in the baking pan that is filled with bread, make sure you cover every single bread slices.  Add 1/4 cup milk to the bread in case the liquid is not enough.

Sprinkle your preferred topping - berries, nuts, etc ..... and leave them for about 30-60 mins for the bread to soak in the cream cheese mixture.  

Bake in a preheated oven for 45 mins to 1 hour, until the top is crusty and brown. 

Dust with icing sugar, if you like, before serving.

Angels - Mission Possible...!?

Last week was a week full of excitement for me. One, because I was busy with my work, so the week went by faster than usual…. (meaning: less time spent on ‘termenung’ & missing my husband); Two, my hubby dearest was scheduled to arrive on Friday night (3rd March 2006), the more reason for me be thrilled and eager counting the days; Three, me and the rest of March Angels ( Leilanie & T. Ina ) planned to meet up on Friday (3rd March 2006, also) to celebrate our birthdays and Leilanie had this fantastic idea of challenging ourselves to find gifts for the birthday mommies (and the gifts must cost less than 10 bucks each!) – and Leilanie, I must tell you that this challenge really made me sweat all afternoon on Thursday….. hehehe …and Four, me & my husband (and also the children) planned for a weekend getaway to Cyberview Lodge Resort & Spa on 4th & 5th March 2006. There I said it…..nothing much to say about point One & Two…. but point Three and Four…..definitely!!!...

It was Nik's Birthday

It was my husband’s birthday yesterday and we took the day off to ‘merewang’ while feeling young, kononnya. The theme of the celebration? Reminiscing the days when we were courting back in 1993 minus the snow.... ancient sungguh rasanya! We had our breakfast at O’Brien’s early in the morning and took a slow stroll along the shops in OU and enjoyed every minute of it (at 10am in the morning, mind you, and the shops were barely opened). Later we watched ‘Lake House’ and we were charged RM12 only for 2 tickets (the early bird tickets were so damn cheap, I almost fainted!). There were only a few couples inside and we took the opportunity to sit right at the middle (ikut suka hati), since the theater was quite empty. How was the movie? Hmm… ok la, I would say it was the right movie for the occasion… hehe. A bit slow though, biasa la, romantic piece. The ending part was quite ‘touchy’ and yes, Mr Reeves was so stunningly handsome (oh yes, nampak tua sikit la and still got the looks). ...

I am busy, I'm confused!

I have been very quiet this week.. no updates, no hopping around leaving any trail of my existence, probably due to the following reasons: 1. Nasreen will be having her exam next week, so I’m busy reviewing her syllabus (and also nagging to make sure she prepares herself). Yes, instead of her reviewing her books, the responsibility – by default – is shifted to me…. Hmm, mothers nowadays. We feel the pressure more than our kids (and we panic even more while waiting for the results to come out). Hehehe. I can’t remember my mother even touched my textbooks when I was in Primary 3. No wonder we grow old faster these days…. 2. I’m having mood swings this week. One day, I feel elated, then mellow on the next day, moody on the following day. Work is adding on my desk, scope is being expanded, news is floating around and remarks are beings smacked everywhere (manage to steer clear of some and the rest sometimes just landed right on my very lap).
