Well... I am actually on leave today, and that explains the multiple entries.... hehehhe
As always, whenever I am on leave, I crave for something unusual... and today, I am feeling Italian .... I am feeling Tiramisu (literally it means 'pick-me-up').
So off I went to my lil' office (read = kitchen) and start mixing ....
So, here goes...
250gm mascarpone cheese (be warned, mascarpone cheese will cost you about RM20 per tub!)
300 ml cream
2 eggs
75gm sugar
2 sachet instant coffee / cappucino / espresso (any coffee drinks will do) - mix with 2 cups of hot water
shaved chocolate or cocoa powder for topping
1 packet of savoiardi biscuits
To make the cream:
Beat eggs and sugar till thick (and the color becomes lighter).
Beat in mascarpone cheese till combined.
Fold in cream till all come together.
Slightly dip the biscuits in coffee mixture - biscuits absorb water REALLY fast, so make sure the 'dipping' is really short
Arrange one layer of biscuits, then pour the cream mixture on top (another layer). Continue and make another layer of biscuits and cream till you fill up the pan.
(I used disposable plastic tupperware because I want to bring them to office tomorrow)
Finish the layer with cream and top it with shaved chocolate or sifted cocoa powder.
Refrigerate for at least 4 hours before serving.
