Meatballs Pasta with Tomato Sauce

Yummy Giant Meatballs Pasta

This is my all time favorite.  Whenever I need a simple meal (read = lazy to cook), this is my go-to-recipe.... simple, delicious, tasty - all in one meal.

What you need for this recipe?

Pasta - as usual, cook according to the directions on the box, drain and lightly coat with Virgin Olive Oil (about 1-2 tbsp).  I used fettuccine for this recipe. You can also use Angel Hair or Spaghetti or Penne.

Recipe for Meatballs

300gm lean minced meat (you can mix with minced chicken too... totally up to you)
1 egg
1 cup breadcrumb
1/2 cup fresh milk
Salt and pepper
Chopped parsley (optional)

Mix all of the ingredients with a spatula until well blended.
Take about 1-2 tbsp and shape to form a ball - about the size of a golf ball.
I used ice cream scoop to ensure consistency in terms of size of the meatballs... but yeah, that is not necessary unless you wanna make sure that the meatballs look pretty on your plate -_-
Lightly coat the meatballs with olive oil and bake for 5-10 mins (this is just to slightly hardened the outer layer of the meatballs before you dump them in the tomato sauce)
Remove them and let cool while you work on the sauce.

Recipe for Tomato Sauce

2 cans of peeled tomatoes
Sliced button mushrooms
Meatballs
Salt n pepper
Brown sugar

Since this is a recipe for the lazy ones, I used 2 cans of peeled tomato.
You can also boil fresh tomato for a few minutes, peel off the skin and mash them to make the sauce.
Heat up your pan and add in about 3-4 tbsp olive oil.  Crush 2-3 cloves of garlic and fry until aromatic.  
Add in peeled tomatoes and sliced button mushrooms and cook until the tomatoes are completely mushy and soft.  At this point, you can crush the tomatoes if you like (I do!).
When the sauce starts to bubble, add the meatballs and let them cook completely. Stir occasionally (slowly, please... you don't want to crush the meatballs ya) and let the sauce cook completely until it thickens.  Add in salt, pepper and brown sugar - up to you how much you want to put these because I have no measurement for these ingredients.

Serve with pasta while the sauce is still hot and sprinkle grated Parmesan cheese on top when serving.... Writing this makes me hungry! :0

A Walk to Remember!?

Finally, I’m writing…. The trip to Singapore was fun…. And also, full of crazy moments.. heheh… Clockwise : The Q @ immigration, street performers @ Orchard, moi infront of Far East Plaza, Nik chilling out @ Starbucks Suntec CT & my precious new sandal... I like!! We left KL after Subuh & managed to reach Johor around 10am. The trip was a short one so we decided to leave the kids behind. It was a smooth ride on a cool & very breezy morning with just enough sun all the way (yes, made me sleepy also!). I took some cool pictures along the way and later discovered that I accidently deleted all of the scenery pics from my camera.... *sigh* Sometimes I can be more than the word 'clumsy' could describe... Anyway, we wanted to enter Singapore via TUAS, then I remembered that we didn’t even have a single cent of S$, so we drove down to JB town and looked for money changer. The Day I Decided To Write Again

I've closed this door some years ago... and I thought I'd be closing it for good.  Even my last visit here was years ago.  Today I decided to open it up again.... and maybe I should start writing again.  So many things happened in the last few years, good and bad, happy and sad... now, I guess, is just the time to share some and to keep them here as memories.
